I (Virginia) found a recipe for this on the internet and demanded it exist. Benedikt made it so.
I (Benedikt) started out making Dulce de Leche in the pressure cooker. Virginia is scared of the pressure cooker.
Then I baked a tarte shell using my butter cookie dough and a 5″ tarte pan. I let it cool off, and in the meantime whipped about equal amounts cream cheese and Dulce de Leche in the stand mixer. I spread the whipped mixture evenly into the cooled off tarte shell and put it in the freezer for 15 minutes to firm up a little bit. I cut a banana into slices and spread them on top of the cream. Then I filled about 6oz whipping cream into a siphon, added 1 tsp dried coffee, 1 tsp vanilla extract and 2 tbsp confectioner’s sugar, shook everything well and charged the cream with one cartridge of N2O. I finished the tarte with this coffee-flavored whipped cream.
