Leftover pork roast? Pork sandwich!
It’s wicked cold here in Maine. Summer memories of these pork sandwiches warm us up. I had made a pork roast and we had a ton left over. What better way to use up the meat than slicing it thin and sautéing it with onions and hot sauce (Maine-made Canceaux is the best) in a cast-iron pan to put it on a sandwich? Use a fresh hamburger bun (King Arthur Flour has a nice recipe) and add some arugula. Served with slightly sweet iced tea and fresh mint from the garden. Summer can’t come back soon enough.
